Ingredients:
One rack baby back ribs
Uncle Eddy’s All Purpose Seasoning
Honey to taste
2 cups water
1/2 cup apple cider vinegar
1/2 t. Liquid Smoke
BBQ sauce to taste
Rinse and pat dry the ribs. Remove membrane from the bone side of ribs with paper towel. Place ribs on a large baking sheet covered in foil. Generously sprinkle Uncle Eddy’s Seasoning all over the ribs including bone side and edges. Drizzle honey on meat side of ribs.
In the Instant Pot put the wire rack inside the pan making sure both handles are up. Add 2 cups water, the apple cider vinegar and Liquid Smoke. Place ribs inside the pan curving them around to fit. (Keep foil covered cookie sheet for later.) Shut the lid and set pressure cook to 35 minutes. After the 35 minutes let pressure release for 10 min and then open lid. Carefully remove the rack and ribs from the pot and lay out ribs on the previously used cookie sheet. Cover all sides of ribs including bone side and edges in your favorite BBQ sauce. Place in oven on broil for 5-8 minutes or until the sauce starts to bubble and “tighten”. Remove from oven and serve.
